Chinese Cabbage, Bok Choy
This widely, commonly grown annual Asian green, also called pak choi, has thick white leaf stalks and smooth, dark green leaves. It is one of the most popular Chinese vegetables, and the main ingredient in chow mein and stir-fries.
This variety will produce wonderfully uniform plants that will grow rapidly, vigorously, and will be slow to bolt in the heat of the sun. This is a perfect plant to add to your garden for quick growth and consistent production. You can cut and come again for continuous harvests throughout its growth cycle or cut and harvest the entire plant once its reached maturity. This is one of our favorite leafy greens to grow.

Sun, soil, and water requirement: Bok choy likes full sun to partial shade in well-draining yet moisture-retentive soil that is rich in organic matter. It will need consistent irrigation throughout its growth cycle, especially during dry spells.
Harvesting: You can harvest bok choy a few leaves at a time or wait for the whole head to mature. Pick the oldest, largest leaves from the outside of the plant for cut-and-come-again harvests. You can also harvest the entire head when your plant is mature, and the oldest leaves are still tender. It won’t store for a long time, so it’s best to use it soon after harvest.
Culinary: Its mild flavor makes it a great addition in most meals that use leafy greens however, it can be easily overcooked. Its most popularly used in stir-fries, soups, noodles, meat dishes, and salads.
Nutrients: Bok choy is highly nutritious, packed with fiber, vitamins, minerals, and antioxidants, but is also low in calories and carbohydrates.
Companion planting: Bok choy can attract several pests, so plant it near herbs and/or vegetables that detract them. Celery or thyme can help repel cabbageworms while plants in the onion family help deter maggots. Rosemary, sage, thyme, coriander, and nasturtiums help keep flea beetles and aphids away. Keep away from, strawberries, rue, tomatoes, garlic, pole beans, and mustards.
