Lavender is a must-have perennial herb in the garden. It's big, bold, beautiful, beneficial, and just a delight to smell on your morning stroll through the garden. Honeybees will throw cookouts near these plants daily while it's blooming, which is all the time. Their bright purple blooms against their subtle, gentle light green foliage and aromatic leaves make it a favorite in any home garden.

Sun, soil, and water requirement: Lavender enjoys full sun, rocky, well-draining soil, and biweekly watering. When plants are fully mature, watering from rainfall may be all it needs.

Harvesting: The flower spikes can be harvested just as the flowers begin to open. Hang to dry in a dry, well-ventilated location out of direct sunlight.

Culinary: Lavender flowers are edible and can be used to garnish desserts or baked goods. Its flavor is sweet, floral, and pairs well with citrus, berries, nuts, mint, and cinnamon.

Nutrients: Lavender oil has been used for medicinal purposes for centuries. It has antiseptic and anti-inflammatory properties. Research suggests it has benefits in treating insomnia, anxiety, depression, and fatigue. We use lavender for anxiety often. We even put some behind the ears of our animals during thunderstorms, the 4th of July, or the new year fireworks to help calm their nerves. I use it for my nerves too!

Special considerations: Mulching during late fall/early winter will help keep the soil warm going into the new year when the night temperatures drop some.

Companion planting: Plant near rosemary, sage, basil, oregano, thyme, mint, brussel sprouts, cabbage, cauliflower, broccoli, and celery. Its strong odor will repel insects in your garden.
