Parsley is a wonderful herb to grow, especially if you like cooking. Fresh parsley is delicious in sauces, salads, and soups. It will provide for your family over a long growing period, and its nutritional benefits make it a perfect herb to add to your herb collection.

This large Italian variety of parsley has a strong, potent flavor making it perfect for sauces. Its huge, dark green leaves and strong, upright stems make it one of the most popular varieties to grow. It’s a very high-yielding annual that often self-sows, returning year after year. We love planting parsley among our peppers and near our cosmos flowers.

Plant spacing: 10-12” apart

Sun, soil, and water requirement: Parsley prefers full sun to partial shade and grows well in moist, fertile soil. Water during dry spells and side-dress with compost or a balanced fertilizer once or twice during the growing period.

Harvesting: Harvest parsley leaves when needed and use either fresh or dry. Harvest by cutting the stems at ground level when they are about 5-10 inches tall. To dry, wash clipped leaves and spread out shallowly on screens in a warm, airy place. When thoroughly dry, rub and store in jars.

Culinary: You can put chopped parsley on everything! Parsley goes great with grilled vegetables, roasted potatoes, a cold green-bean salad, stews, soups, pasta, hot or cold grain dishes like couscous or quinoa and so much more.

Nutrients: Parsley contains several important nutrients, such as vitamins A, K, and C. It's also a good source of minerals, calcium, iron, magnesium, and potassium.

Companion planting: Plant near corn, rose, tomato, chive, carrot, pepper, onion, peas, asparagus, basil, cilantro, tarragon, and chili. Keep away from mint, and lettuce. When allowed to go to seed, parsley will attract hoverflies, the larvae are known to eat aphids.
